Turkey Lettuce Wraps with Peanut Butter Sauce

I forgot how amazing these taste until I made them the other night for dinner!  Now let's be honest, of course they are delicious, there is peanut butter in the sauce! #WhoCanSayNoToPeanutButter Haha!! So, one thing you might not know about me is that I LOVE to cook (yes, just as much as I love to workout) but I am horrible when it comes to measuring.  For as many times as I have made these lettuce wraps, I have yet to write down a recipe...until NOW! Here it is, make them now and often! And enjoy!! xx  
Turkey Lettuce Wraps with Peanut Butter Sauce

Ingredients:
1 lb. ground turkey 1/2 small onion, diced 1/4 peanut butter 1 tsp onion powder 2 cloves fresh garlic, minced 1 tsp. ground ginger (or grate fresh) 3/4 cup water 2 Tbsp. low sodium soy sauce 1 Tbsp. rice vinegar Romaine lettuce leaves Optional Garnishes: Fresh cilantro, chopped Carrots, cut into small strips Peanuts, chopped Lime juice
Instructions:
1. In a large skillet or wok over medium heat, saute diced onion in coconut or olive oil. Add ground turkey and cook until browned and reduce heat. 2. In a small bowl or measuring cup, combine peanut butter, water, soy sauce, rice vinegar, ginger, onion powder, and garlic. Sauce will be slightly chunky due to the consistency of the peanut butter. That is fine. 3. Add the sauce to the cooked turkey and stir to coat. Let cook a few minutes. If sauce gets thick, add a splash of water to thin it up. 4. Wash whole lettuce leaves under cold water and pat dry. Prepare desired garnishes. 5. Using each leaf like a boat, scoop some of the meat mixture into it. Top with desired garnishes.
