Two Bite Peppermint Patties

I'm pretty sure these are the ultimate indulgence because the super special ingredient is my absolute favorite: coconut oil. I know I don't have to remind you of all the benefits of coconut oil, but as a refresher this is a perfect example of  healthy fats, fill power and sustained energy. In a dessert. That tastes a million times better than the kind you buy in foil packets where the ingredients go something like this: "Sugar, corn syrup, semi-sweet chocolate (with the first ingredient as sugar), invert sugar..." So cut down on your sugar intake by making your own version and enjoy all the health benefits of coconut oil at the same time!

4 Ingredient Peppermint Patties

(makes approximately 16 patties)

1/2 cup coconut oil (best if it's in solid form) 1/4 cup raw honey 1/2 teaspoon peppermint oil 1 cup bittersweet or dark chocolate chips


Combine first three ingredients  to a smooth consistency and harden in the freezer for 10 minutes. Use a spoon or 1 1/2 teaspoon scoop to make balls of the mixture. Harden in the freezer for 10 minutes. Melt chocolate. Use the lid of a jar or something with a flat surface and flatten each ball. Drop into melted chocolate, flip and place on parchment. Harden (one last time, this time in the fridge) and enjoy!   Recipe credit: Elana's pantry
