vegan / gluten-free Purple Sweet Potato Soup

After train I love the cold shower and a hot soup. Sweet Potato is my favorite for loading after train. This is vegan & gluten-free.

Serves: 3

You´ll need: 1 purple sweet potato 1 leek 1/2 green bell pepper 1 small chili 500 ml water salt & pepper 2 tbs parsley

Peel sweet potato and cut into chunks. Chop the leek and dice the pepper. Put all into a saucepan with water. Add 1 teaspoon of salt and half of pepper. Bring to boil, reduce heat and simmer, covered for 10 minutes.


Mash with a potato masher. Fill into soup plate and garnish with parsley.
