Vegan Indian Curry
Want to cook a meal in 15 minutes, which is healthy & delicious? Try this: Serves: 6Ingredients: 1 tablespoon virgin coconut oil 1 red onion 10 oz chickpeas 1 romanesco 1 cauliflower 4 carrots 1 can coconut milk 2 slices ginger 2 teaspoons curry powder 2 tablespoons Tahini salt & pepper Instructions: Chop romanesco & cauliflower into florets. Peel carrots & cut into fine stripes. Dice red onion. Heat coconut oil in a pot, give all vegetables into & roast. Spice up with salt and pepper. Give coconut milk, chopped ginger, Tahini & curry powder into. Let all cook for 10 minutes. You can replace the cauliflower by broccoli. Enjoy!
