Vegan Spinach & Quinoa Patties

  • 1 c. quinoa
  • 1 c. frozen spinach, chopped & thawed
  • 3 c. water
  • 1/4 cup green onions
  • 1 cup Italian bread crumbs
  • 3 eggs
  • 1 tsp. garlic powder
  • 1 tbsp. olive oil
  • salt/pepper to taste
  1. Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 15 to 20 minutes.
  2. Heat a saucepan to medium and place olive oil in the pan.
  3. Stir quinoa, spinach, bread crumbs, eggs, farlic powder, salt/pepper, and green onions together in a bowl.
  4. Drop spoonfuls of the quinoa mixture onto the heated saucepan, pressing with the back on a spoon.
  5. Carefully, using a spatula, flip each patty and cook until golden brown-approx 3-5 minutes each side.
