1 1/2 C spelt flour 1/2 tsp baking soda 3/4 tsp salt 1/2 tsp cinnamon 3/4 C unsweetened cocoa powder 1/3 C honey melted 1/2 C applesauce 1/3 C coconut oil melted and cooled slightly 1tsp white or apple cider vinegar 1 1/2tsp vanilla 1 C zucchini grated 1/2 C chocolate chips Preheat oven to 350F and line muffin baking sheet with muffin papers. Put all dry ingredients in one bowl; flour, baking soda, salt, cinnamon, and coco powder, set aside. In a large measuring cup combine all liquid ingredients; honey, applesauce, coconut oil, vinegar, and vanilla, with grated zucchini. Mix the wet into the dry. Once they are incorporated together mix in chocolate chips. Scoop into muffin pan. Bake approximately 19 min. Careful not to fill to full they may rise slightly. You can add chocolate chips to the top when part way done, but obviously in effort to keep calories down, use some from the original 1/2 cup to do so or don't add them at all.
