I love hummus, but it’s nice to switch it up sometimes! Try my zucchini hummus, bean free for a change. Serve immediately with crackers, my Chickpea Flatbreads or as an alternative to guacamole or sour cream on Mexican night. Ingredients: 1 medium zucchini, chopped 1 clove of garlic 2 T tahini 2 T lemon juice 1 t sea salt ½ t cumin Pinch of cayenne Preparation: Mix all ingredients in a high-powered blender or food processor until smooth. Variations: Add cilantro and use lime juice instead of lemon.
