A Sip of Summer! Try Our Blackberry Virgin Mojito Popsicles

Popsicles can bring back memories of running through sprinklers and the long, hot, summer days of our childhood. As great as that time may have been, our tastes change as we get older. We may crave a cool, quenching popsicle, but we don’t necessarily want the artificial flavours and colours of the summer treats of our youth.

That’s why we love this healthy popsicle recipe. Not only is it refreshing and delicious, but these pops come packing the many health benefits of blackberries which include being replete with vitamin C and fibre, and even being shown to boost brain and oral health. 

And yes, this recipe is alcohol-free, mainly because we wanted to keep it as nourishing as possible. However, you can swap in some rum for water, if you fancy a frozen tipple.

Easy to make and easier to love, this healthy popsicle recipe can be made in minutes and enjoyed within a few hours.

Blackberry Virgin Mojito Popsicles

Makes 10 popsicles. 1 serving = 1 popsicle


Calories: 90 

Fat: 0.8 grams

Protein: 1 gram

Carbs: 23 grams


Ingredients
3 cups blackberries (fresh or frozen)
Juice and zest of 1 lime
2–4 tbsp honey or agave, to taste
3–5 leaves fresh mint 
1–2 cups water

 

Instructions

Place all ingredients in a blender. Puree until as smooth as possible, adding more water as necessary. 

Strain mixture through a fine-mesh sieve to remove seeds, then pour into a popsicle mold. Insert sticks and freeze until completely solid, about 3-4 hours.
