Hawaiian Turkey Burgers with Pineapple Papaya Sauce

Swaps:

You can swap in red meat for the turkey, but just be aware that red meat should be enjoyed in moderation. Once a week, at the most, is ideal. If you don't like ground turkey, try lean ground chicken, pork, or lamb, or, for a vegetarian option, lentils (with two eggs or egg substitutes to promote binding).

Lower-Carb Option:

Use two grilled portabello mushrooms instead of buns. Just brush them with a little olive oil before hand. You can also wrap your burger in lettuce leaves.

Hawaiian Turkey Burgers with Pineapple Papaya Sauce

(makes four servings: 1 burger and ¼ cup sauce)

You'll need:

Pineapple Papaya Sauce

¼ cup fresh pineapple, chopped 

3 tbsp fresh papaya, finely diced

⅔ cups barbecue sauce

1 tbsp low-sodium soy sauce

Burgers: 

1 pound ground turkey

3 tbsp unseasoned breadcrumbs

2 tbsp onion, finely chopped

¼ tsp cayenne pepper

1 tbsp brown sugar

1 tsp olive oil

¼ tsp salt

⅛ tsp black pepper

4 whole grain buns, toasted

4 lettuce leaves

4 tomato slices

4 thin slices red onion

Directions: 

Combine all sauce ingredients in a saucepan, cook over medium heat, stirring frequently until it boils. Simmer for 10 minutes. 

Preheat grill.

Mix ground turkey, breadcrumbs, onion, cayenne, sugar, and ⅓ cup of sauce, in a bowl until well combined. Form into 4, 1 inch patties. 

Brush burgers with oil, season with salt and pepper. Grill over medium heat, turning once, about 6 minutes per side. Baste with sauce and grill 2 minutes more. 

Place burgers on roll, and spoon on remaining sauce. Top with lettuce, tomato and onion slices.
