Vegan Protein Popcorn
You probably already know that as far a healthy treats go, popcorn is one of the best. Not only is it delicious, but it's also packed with satiating fiber and polyphenols—antioxidants that can improve circulation, digestive health and may even lower one's risk of certain cancers.
And, when you add a few key toppings to this popped treat, it gets even better for you. We're talking about our Vegan Protein Popcorn recipe. All you need is your kernels, some nutritional yeast, a drizzle of coconut oil and a pinch (or two) of salt.

The Benefits of Vegan Protein Popcorn
Nutritional yeast is an excellent source of vegan protein (8 grams per 2 tablespoon serving) and is high in B vitamins.
It's also been shown to:
- Promote skin, nail and hair health
- Boost immune health
- Support a healthy pregnancy (nutritional yeast is fortified with folic acid, which prevents congenital abnormalities in the fetus)
Then, there's the coconut oil—a healthy fat that supports heart health and helps to control blood sugar.
Vegan Protein Popcorn Recipe
Makes 4 servings
Ingredients
8 tbsp popcorn kernels
1/4 cup coconut oil, melted
8 tbsp nutritional yeast
salt to taste
Directions
- Pop the popcorn kernels and then add the melted coconut oil. Toss until coated.
- Add nutritional yeast. Toss until coated.
- Add salt.
- Enjoy!
